How to Bake Perfect Chocolate Chip Cookies

Chocolate chip cookies are quite delicious. Most people love the blend of crispy and chewy. Perhaps you have your favourite recipes, but your cookies come out a bit too crispy or too flat or burned. There may be a few things that you are doing (or not doing) that, unfortunately, turn those treats into mini burned bricks. This is a guide for how to take your ordinary recipes for chocolate chip cookies and turn them into something truly extraordinary.

Step1
Bring your eggs to room temperature. This may sound strange because those recipes do not say anything about the eggs, but there is something about bringing the eggs to room temperature that improves the quality of those chocolate chip cookies.

Make sure that the butter is soft but not too soft. All recipes say that the butter should be softened, but if the butter becomes too soft, your batter will spread too much on the sheet, and your chocolate chip cookies will burn.

Use a sheet that only has a lip on one side. Most cookie sheets have raised edges on all four sides. However, to make the best chocolate chip cookies, you need to buy a sheet that is without those lips on at least three of those sides. They may cost a bit more, but without the lips, the heat from the oven can flow better over the batter, creating the best chocolate chip cookies.
Step4
Use a mini scoop to make sure that all of the balls of dough are the same size. Most recipes simply say to spoon out the batter onto the sheet. The key to perfect chocolate chip cookies is to make sure that all of the balls are the same size. That way, they will all cook at the same rate.

Sightly undercook the dough. This is another tip the recipes never mention! If it says to keep them in the oven for 8-10 minutes, take a look at them at 7 minutes. The middle may be slightly underdone, but that is ok! Take them out, and allow them to sit on top of the stove for a few minutes. The sugar will continue to cook even though the tray has been removed from the oven. The result will be chocolate chip cookies that are chewy and stay chewy longer.
Step6
Let the sheet cool before scooping on the next batch. If you put the dough on a hot sheet, the dough will spread and start to cook too soon. So, let everything cool down before putting in the next batch!
